Spinach & Black Bean Pizza

So, what does a vegan personal fitness trainer eat? I'm asked this question any time I tell someone that I follow a vegan diet. I must admit, it is tough at times to quickly prepare a meal when time is of the essence. However, if given enough time, you can prepare a nutritious and filling vegan meal. 


As a vegan, creativity is crucial in the kitchen. With that said, here is the recipe for one of my favorite vegan dishes, Spinach & Black Bean Pizza. The great thing about this dish, is that you can add or subtract any ingredient you want. Enjoy! 


INGREDIENTS:


-1 Cup of olive oil.


-2 Tablespoons of Earth Balance buttery spread.


-Flour tortilla(s)


-1 Cup of canned black beans.


-1/2 Cup of chopped red onions.


-2 Cups of chopped frozen spinach.


- 1 Cup of Daiya vegan mozzarella cheese. 




PREPARATION:


1. Pre-heat oven to 350 degrees. In a small saucepan, combine olive oil and buttery spread and cook on low to medium heat. Make sure spread is melted.


2. Remove olive oil from heat and stir to blend both ingredients.


3. Pour olive oil onto uncooked tortilla and spread it evenly.


4. In this order, layer spinach, black beans, red onions and cheese on the tortilla. Be sure to spread out your ingredients.


5. Lastly, place tortilla on oven rack and allow it to cook for 8-12 minutes. Once the edges of the tortilla are crisp, it's done! enjoy!
